The yet unnamed chef and boss (大将 Taishō?)[N 1] of Beika Iroha Sushi is a character in Detective Conan. His sushi restaurant is a neighbor of the Mouri Detective Agency and he notably hired Kanenori Wakita.

Background

As a keyhole character (volume 108).

He is an elderly shop owner of a traditional sushi restaurant in Beika Town and has two regular employees, one unnamed assistant sushi chef and a front employee. His previous front employee was involved in an accident and he thus hired Kanenori Wakita as a replacement.

No information is given about him and it is assumed he is a seasoned sushi chef, considering he has many regular customers, including Natsume Ashino. It is unknown whether he owns the building, but judging from the fact that he must wake up early to buy fish and then prepare before opening, he must live close to the sushi restaurant. He seems to be good friends with Kogoro Mouri, as he is an occasional customer.

Appearance

He is an older man of short stature, with grey to white short hair. He has big ears, a big nose, big uneven eyebrows and a prominent jawline, making him look rough. This is however not reflected in the anime adaptation of his first appearance. He is cleanly shaven. He is only shown wearing traditional chef attire, consisting of a flat cap ("wabōshi", 和帽子), a white overshirt and a dark undershirt.

Personality

Speaking in traditional Edo dialect, he is a jovial man who takes pride in his work, smiling when customers come. He becomes angry when Wakita suddenly leaves from the job, calling him an idiot ("tonchiki", トンチキ) in local Edo lingo.

In Hanzawa the Criminal, he is shown to be sensitive to the love stories of others and is shown to be emotional.

Interchanged Betting Ticket Case (Manga: 975-977, Anime: 894-895)

He is shown for the first time in the horse betting tickets case, when Kogoro goes to Iroha Sushi along with Conan and Ran, to treat himself after "winning" at horse betting. He is greeted by a new employee, Kanenori Wakita, while the owner is working at the counter with his assistant. Wakita later reveals that he knows about Kogoro's betting habits because of his boss, the chef.

Crimson School Trip Case (Manga: 1005, Anime: 928)

While Wakita is looking at his cellphone the news of the possible reappearance of Shinichi Kudo in Kyoto, the chef is seen in the background making sushi.

Video Gamer Locked Room Murder Case (Manga: 1147-1150, Anime: TBD)

Following Wakita's escape from a crime scene after being confronted with the FBI and Rumi Wakasa, Jodie Starling and Andre Camel drop by Iroha Sushi to interrogate the chef about Wakita's whereabouts. He tells them that he does not know where he went after making a delivery and that he is upset he cannot be reached. He asks Jodie and Camel to try to reach him for him, but they tell him that they cannot either, not revealing the truth that he is in fact Rum, the Black Organization's second-in-command. He likely will not be targeted by the organization after, considering Rum did not give him compromising information.

Other mentions

He is first mentioned in the Ramen So Good murder case, when Kogoro and Conan wanted to go to the restaurant to eat and find out it is closed because the chef was invited by the Café Poirot Master to a trip to the hot springs along with the whole neighborhood association. Later, in the end of the FBI serial murder case, Wakita arrives at the restaurant and greets the chef, who is not shown in the chapter.

Non-Canon plot overview

Following Wakita's departure, the chef put up a sign for hiring employees and hired Makoto Hanzawa. He is happy that with Hanzawa's work and tells him about his woes of having to deal with his previous employee's sudden disappearance. While Hanzawa is in thoughts, seeing that he is not working, the chef sends to greet customers. Later, during service, he eagerly listens to Yui Uehara telling Kansuke Yamato that she did not marry him because she thought he was dead and she only married into the Torada family to avenge Kuroto Kai's death. He is surprised and stops moving when he hears that Yui's husband Yoshiro also died. When Yamato reprimands the whole restaurant for listening to passionately to the romance reality TV show, he feels guilty.

Trivia

  • The Hanzawa the Criminal chapter in which he appears shows that many famous people went to his restaurant, but this is unconfirmed in the manga, as the autographed plates were not seen in manga version Iroha Sushi.
  • It is unknown if the previous front-of-house employee recovered after Wakita replaced him and if he will ever work for the chef again.
