because his father who was the original kid was a gentleman-like thief so kaitou is doing the same thing

His father, the Original Kaitou Kid. Killed by some mysterious organization which I believe is not the Black Organization Of DC. The current Kid decide to steal because

1) He want to draw that people out to get revenge.

2) The "mysterious organization" looking for "Pandora" with grant immortality. Pandora said to be found in big jewel. So he try to get any big jewel before the organization and when he know it not the jewel he want, he return it. He's gentleman-like because it's no point hurting people.
